- 14 medium sunchokes (Jerusalem artichokes) scrubbed, not peeled
- 10 cloves garlic cut large ones in half
- 4 sprigs fresh rosemary
- 4 Tblsp extra virgin olive oi
- 1/2 tsp sea salt (optional)
- to taste fresh ground black pepper

- Bake a 375° for 45 minutes or until sunchokes pierce easily with a fork.
